During this quarantine, I have been watching so many cooking videos/TikToks, and one of the main dishes that gets prepared is fried chicken. I finally had to cave and make some of my own - Trader Joe's Style of course. The Elote Corn Chips from Trader Joe's are one of my all time favorite products, so I am always brainstorming on how to incorporate them into my meals. Finally, the two ideas of fried chicken and elote chips combined in my head and gave me the inspiration for this recipe. So here is my Trader Joe's Elote Corn Chip inspired Fried Chicken, enjoy!
3 chicken thighs
1/2 cup flour
2 tbsp cayenne
1 tbsp garlic powder
1 tbsp salt
1/3 cup Trader Joe's Elote Corn Chips
1/3 cup bread crumbs
Sandwich Ingredients (optional):
2 tbsp mayo
1 tbsp Trader Joe's Bomba Sauce
1 tsp relish
Handful of spinach
Mix up your flour mixture of flour, cayenne, garlic powder, and salt.
Beat your egg, similar to a scrambled egg.
Mash up your Elote Chips until they are a similar size to your bread crumbs (I did this using a potato masher).
Pound your chicken thighs to make sure they are thin (I did this by hitting them with a rolling pin).
Dip the chicken thighs into your flour mixture (you can add more or less of each spice - I like to add a good amount of cayenne to make the chicken spicy).
Once coated, dip the chicken into the beaten up egg.
Coat your chicken thigh now with your Elote Chip/bread crumb mixture. Make sure it is fully coated so that it will be nice and crispy once fried.
Fry your chicken on medium high heat. Cook each side for 3-5 minutes depending on how crispy you want the chicken to be.
