I love Joe-Joe's and I absolutely love cheesecake so I thought, why not combine the two into one delicious cookie! These Joe-Joe Cheesecake cookies were soo delicious and very simple to whip up. They turned out just as amazing as I dreamed! You can find the video of me making these cookies here. Here's the recipe that I used:
2 tbs cream cheese
10 tbs softened butter
1 cup sugar
1 cup brown sugar
2 tsp vanilla
2 cups flour
1/2 tsp baking soda
20 Trader Joe's Joe-Joe cookies
Add the cream cheese, butter, egg, vanilla and both sugars together and mix until the mixture reaches a smooth, creamy consistency.
Add your baking soda and flour in slowly so that it doesn't fly around the room!
Chop up your Joe-Joe's into fairly large chunks. You don't want them to be too small since you really want to get the Joe-Joe experience. A cookie within a cookie!
Let your mixture cool in the fridge for about 30 minutes.
Scoop your mixture onto your baking sheet and bake at 350 for 14-16 minutes. Take them out and enjoy!
2020 has been a year filled with a lot of baking for me. This has been one of my favorite recipes and I always love incorporating TJ's ingredients wherever I can!
